Tracking - Whether just a vocal over a beat, an acoustic guitar, or a full band, or an exotic instrument, it can be recorded many ways. One mic. 3 mics. 12 mics. M/S. XY. Spaced. Capturing the sounds of the song is crucial to a great sounding masterpiece.
Editing - Cleaning up audio. Getting rid of excess noise, comping vocals together (or guitar, bass, piano, or any instrument), beat detective, sound replacing/layering (such as on kick drums or snares), and much much more.
Mixing - This is the process that really brings the music to life. Balancing levels and tones between instruments, sounds, and voices, and cleverly using compression, eq, delay, reverb and whole lot of "tricks" and "secrets" to take your music to the next level.
Mastering - An art by itself, this brings the music to par with the levels of your favorite CDs and songs on the radio, and also enhances the mix (and sometimes fixes the bad mixes others have done). Preferably mastering is done by a fresh pair of ears (not the engineer that tracked/mixed the music) on a different pair of monitors than used to mix.
